Chufa, also called earth almond or tiger nut, is not a nut but a tuber that grows between the roots of Cypergras. Chufa is a gluten-free ancient food that has been around for two million years. This tuber with a sweet almond-like taste is rich in unsaturated fats, minerals, vitamins, amino acids and proteins.
